Banana flapjacks

A great use for overripe bananas!

Ingredients
  

  • 2 ripe bananas mashed
  • 250 g oats
  • 2 handfuls raisins
  • 150 g marg / butter
  • 150 g honey
  • I also chuck in a coupe of handfuls of flaked almonds or pumpkin seeds too.

Method
 

  1. Pre heat the oven to 180 degrees fan and line a baking tin with greaseproof paper. Melt the marg/butter in a small pan over a low heat(or in the microwave) along with the honey. Allow to cool slightly.
  2. Mix the wet ingredients with the dry ingredients in a bowl. Pour into the baking tin and press down firmly. Bake in the oven for35-45 minutes (it seems to vary for me each time!) or until the top is golden. To stop the raisins burning you can cover the tin halfway through cooking).
  3. Remove from the oven an allow to cool and harden before slicing. They will keep for a few days in an airtight container or you can freeze them too.
