Easy baked eggs with nduja

A spicy weekend breakfast or light evening meal.

Ingredients
  

  • 1 x block of feta
  • 3-4 spring onions chopped
  • 2-4 eggs
  • a generous smear of nduja
  • bag of spinach
  • To serve: toasted sourdough or other bread of choice

Method
 

  1. This really is about as simple as it gets and hence the amounts are a bit haphazard depending on the meal you are prepping and how many for! Preheat the oven to 180 degrees fan. Take a baking tin and load with half to all a bag of spinach, thinking about how much it wilts and how many you are feeding. Now place a block of feta in the middle, and smear a dollop of nduja on top of the cheese. Add a drizzle of olive oil to the tin.
  2. Sprinkle the spinach and feta with the spring onions and finally crack as many eggs as you wish around the feta onto the spinach. Allow 1 per person. Scrunch with black pepper and pop in the oven. Cook for 15-20 minutes or until the eggs are baked and the feta softening. Remove from the oven, mix it all around in the tin to combine and then spread on to toasted sourdough (or other bread of choice).
