Smoky Spanish Sausages with Aioli

  • 600 g baby new potatoes quartered
  • 3 peppers cut into chunks
  • 200 g cherry tomatoes halved

Meanwhile, heat the remaining 1 tbsp of the
olive oil in a large frying pan and cook the
sausages for 15-20 minutes over a medium
high heat, turning regularly, and until cooked
through.

Stir the olives into the roasted veg, mixing
everything well. Return to the oven for 3-5
minutes until the veg are tender and starting
to catch at the edges.

Finally, mix the ingredients for the aioli in a
small bowl. Divide the sausages and oven
roasted veg between plates and serve with
the aioli. We serve with green veg too.
