Miso soup with udon, edamame and salmon

Light, simple and flavoursome.

Ingredients
  

  • 100 g White Miso paste
  • 1 litre water
  • 150 g udon noodles
  • 2 salmon fillets skin and any bones removed and cut into 5cm pieces
  • 250 g endamame beans
  • To serve: 6 spring onions sliced
  • 4 tbsp toasted sesame seeds

Method
 

  1. Put the miso paste and water in a large saucepan and warm over a medium heat. Whisk regularly to ensure that the Miso paste is evenly dispersed.
  2. While the Miso warms, cook the noodles according to pack instructions (they may need boiling in a separate pan). Once they are cooked, drain and set aside. Snip them into smaller pieces to make them easier to eat if you wish!
  3. Once the Miso is hot, add the salmon pieces and edamame then simmer for 5-10 minutes util the salmon is cooked. Add the noodles, stir well and serve immediately, topped with the spring onions and sesame seeds. Add soy sauce too for extra saltiness.
