Quinoa rocky road

A great mid afternoon pick me up sweet treat with the benefit of fibre and protein.

Ingredients
  

  • 100 g dry quinoa
  • 200 g Dark chocolate
  • 60 g almond butter I use Peanut
  • 70 g mixed nuts, seeds or goji berries. (I use pumpkin seeds and flaked almonds as I always tend to have these in the cupboard. I sometimes add a couple of dried dates or cranberries, plus I scatter frozen raspberries on the top!)

Method
 

  1. Rinse and dry the quinoa then toast in a dry frying pan until fragrant. Meanwhile, melt the dark chocolate then stir in the almond butter.
  2. Add the toasted quinoa and mixed nuts/seeds/dried berries to the melted chocolate and mix well. Transfer to a lined loaf tin and sprinkle extra nuts or seeds on to the top (plus those raspberries if you wish!).
  3. Place in the freezer until firm, then slice into squares. Store in the fridge for up to one week.
